Buffalo Chicken Tacos

This is one of my favorite recipes thus far. Tacos are always my go-to because they are so quick and easy and taste so good! The sweetness of the coleslaw in these complements the heat from the buffalo sauce creating the perfect balance. They're not too spicy at all - but if you aren't a fan of buffalo sauce, they taste just as good with BBQ sauce!


Ingredients:

Whole wheat or corn tortillas

Avocado

Chicken breasts

Hot sauce of choice - I personally love Texas Pete

Salt & pepper

Directions:

1) Season chicken well with salt & pepper

2) Boil chicken breasts until cooked all the way through

3) Using two forks, shred chicken breasts

4) Add desired amount of buffalo sauce, depending on how many breasts cooked. This should just be enough to coat the chicken

5) Slice or dice avocado, depending on preference

6) Build tacos starting with chicken, then slaw, then avocado - enjoy!
