Southwest Salmon Burgers

These burgers are the perfect balance between fresh and savory. They have the perfect kick of heat to them! They would pair great with a fresh side salad or some roasted veggies. I paired it with garlic roasted potatoes, roasted butternut squash, and an avocado creme sauce. Yields 2 burgers

Ingredients

2 skinless salmon filets

1 egg

1/8 c corn

1/8 c black beans

1/2 small tomato finely diced

1 tbsp cilantro

Old Bay seasoning

Garlic salt Pepper

Red pepper (optional for added spice)

Instructions

1) Season salmon on both sides with garlic salt, pepper, and Old Bay

2) Cook salmon for 1 to 1.5 minutes on both sides (it is okay if it is not cooked through, we will cook them more)

3) Flake apart the salmon filets using two forks and add to a bowl

4) Finely chop cilantro and add to bowl with salmon

5) Add cooked corn and black beans to the bowl, then add diced tomatoes and mix to combine

6) Add egg to the bowl with salmon and stir to coat evenly

7) Add breadcrumbs to bowl and stir to combine. More breadcrumbs can be added if needed to make a thick consistency. You want to make sure the mixture is thick enough to hold a burger formation

8) optional * add crushed red pepper to add heat if desired

9) Form two to three burgers

10) Heat 1 tbsp of olive oil in a skillet on medium-high heat

11) Add burgers to skillet and cook for 2-3 minutes on each side, or until salmon is cooked
