Grilled Teriyaki Chicken and Pineapple

With it finally getting warm, I figured it was finally time to try out this recipe. I can definitely say I am a BIG fan - this is a perfect meal for summer barbecues! The key is to give the chicken and pineapples plenty of time to marinate in the teriyaki sauce so they really soak up the flavor.


Ingredients

4 chicken breasts

1 pineapple

2 bottles of teriyaki sauce (two brands I have found I like are KC Masterpiece and World Harbors)

Bourbon molasses seasoning (you can use any dry teriyaki seasoning, I just like the flavor of this seasoning)

Garlic salt

Pepper


Instructions

1) If chicken breasts are very thick in spots, pound out using a meat tenderizer until breasts are at an even thickness

2) Season chicken all over with garlic salt, pepper, and bourbon molasses seasoning

3) Poke a few holes in each breast using a fork

4) Add to a medium bowl and pour one entire bottle of teriyaki sauce to cover the chicken (make sure as much of the chicken is submerged as possible!) 5) Using a pineapple corer, cut pineapple rings (I'll throw the link to one at the end of this post - this is a lifesaver! It makes cutting up pineapples SO much easier, and it's only $10)

6) Add the pineapple rings to a separate bowl and pour in the other bottle of teriyaki sauce

7) Add both bowls to the fridge and let marinate for a few hours

8) After they have marinated, add the chicken to the grill (you could also do it inside on a griddle/george foreman or a skillet)

9) Every few minutes, brush some of the excess teriyaki sauce from the chicken bowl onto each breast to keep them moist, especially after flipping

10) Allow the chicken to cook for 10-15 minutes or until almost cooked through

11) Add the pineapple to a different section of the grill (or a different skillet) and grill it for 3-5 minutes on each side

12) Brush the excess teriyaki sauce from, the pineapple bowl on the pineapple as well (be sure to save the extra teriyaki sauce from the pineapple bowl in case you want to pour a little over the top at the end!)

13) Once the chicken is cooked through, plate and top with 1-2 pineapple rings

14) If desired, pour a little extra teriyaki over the top of the chicken (DO NOT use the teriyaki from the chicken bowl - I'm sure that goes without saying, but you don't want to use sauce that has been soaking in raw chicken)
