Butternut Squash Spinach Ravioli

One word - amazing! I will say, this is a recipe that takes a little time. If you are looking for a quick meal to throw together, this is not it. BUT - it is well worth the time! The combination of flavors blends perfectly; it honestly tastes like you're eating a gourmet meal that is pretty simple to make. I never realized how little goes into making your own pasta, and let me tell you, you can really taste the difference. If you try this recipe, let me know what you think!


Serves 6

Ingredients


Ravioli

16 oz spinach

4 cups of flour (roughly)


Filling

1 butternut squash

1/2 cup cashews

2 shallots

Olive oil

Salt & pepper

1 tbsp ground nutmeg

2 tsp ground cloves

1/2 tbsp garlic salt

1/2 c Parmesan cheese

Sauce

3 c heavy cream

2 sticks butter

1/2 lb ground turkey

Salt

White pepper

Italian seasoning

1/2 tbsp minced garlic

1/2 c flour


Instructions

Ravioli

1) Place spinach in a food processor or blender and puree

2) Dust your working surface with flour to prevent dough from sticking

3) Combine spinach with flour and knead - add in a flour 1/2 c at a time until dough consistency is achieved

4) Allow dough to rest for 3-5 minutes to properly set

5) Make sure your working surface and the dough is dusted well with flour so it doesn't stick

6) Using a rolling pin, roll out the dough as thin as you can, making sure it isn't too thin that it starts to tear apart

7) Using a cookie cutter or a drinking glass, cut the dough into circles

8) Place a small spoon of filling on one ravioli, and place another on top

9) Using a fork, press down around the edges of the ravioli, sealing it tightly

10) Boil the ravioli for 5-7 minutes


Filling

1) Preheat the oven to 425

2) Peel and cut the butternut squash into 1-inch cubes

3) Toss the squash in olive oil, salt, and pepper

4) Roast in the oven for 25-30 minutes

5) Place cashews in food processor or blender and finely chop

6) Add the roasted squash to the food processor and blend until smooth

7) Combine butternut squash, nutmeg, cloves, garlic salt, and Parmesan cheese in a large bowl

8) Peel and finely chop shallots and add to bowl, mixing to combine


Sauce

1) Add garlic, half of butter, and ground turkey to a pan

2) Once turkey is fully cooked, add remaining butter and heavy cream and bring to a simmer

3) Allow to simmer for 2-3 minutes and add flour

4) Season to taste with salt, white pepper,and Italian seasoning

5) Allow to simmer on low heat (it will thicken as it sits)


Plate ravioli and top with sauce. Enjoy!
