Creamy Pesto Cauliflower Gnocchi

This is probably going to be my new go-to meal. It is SO good - and even better - only 450 calories! Don't worry, it is still very filling. Another positive is this recipe takes less than 20 minutes! If you're not familiar with gnocchi, it is very similar to a dumpling; it has a very doughy consistency. So if you are not a fan of gnocchi or dumplings, you may not like this meal. However, for anyone else, I highly recommend this meal! I can honestly say that I could not tell the difference between this cauliflower gnocchi and traditional gnocchi. It is so good. I have tons of ideas for other recipes with cauli gnocchi, so keep your eye out for more to come.


Ingredients

1 bag Trader Joe's cauliflower gnocchi

0.5 lbs ground chicken (I used 2 of the chile lime chicken burgers from Trader Joe's)

2 tbsp pesto (I used the Prego basil pesto)

2 tbsp fat free sour cream

2-3 cups spinach

Garlic salt

Olive oil


Instructions

1) Place frozen gnocchi in skillet with 1/4 c of water and cover. Cook on medium for 8 minutes

2) Add ground chicken with a small amount of olive oil to another skillet and cook on medium-high

3) Once chicken is cooked through, add spinach and season with garlic salt

4) Stir spinach in with chicken well and cover skillet

5) Uncover gnocchi and add pesto

6) Stir well to coat gnocchi evenly

7) Once spinach is wilted, add mixture to pan with gnocchi

8) Cook for another 5-6 minutes to brown gnocchi

9) Add sour cream to skillet and stir to coat evenly

10) Once all ingredients are combined well, you are ready to serve
