Protein Bowl

I've had lots of requests for lunch items. This is one of my go to recipes for make ahead lunches. It is so simple, and the best part-super filling! You can also substitute any meat of choice for the chicken, such as salmon or ground turkey.


Ingredients


1 rotisserie chicken

1 package pre-made pico de gallo

Tri-color quinoa

Red cabbage slaw (see side items for slaw recipe)

optional: brown sugar bourbon seasoning


Instructions


1) Bring 1/2 cup of water to a boil.

2) Add 1/4 cup quinoa, reduce to a simmer and cover. Let sit for 15 minutes, stirring occasionally

3) Shred rotisserie chicken

4) Divide quinoa evenly between two bowls

5) Add desired amount of chicken, cabbage slaw, and pico to each bowl

6) Optional: Sprinkle bourbon seasoning on top of chicken
