This coleslaw pairs perfect with tons of entrees - from fish tacos to buffalo chicken sandwiches. The creamy-sweet flavors offset the spice, creating the perfect blend. This dish is so versatile - it is even good by itself! I'm so excited to use this more for Summer barbecues.
Ingredients:
1/2 head of red cabbage
1/2 cup of light sour cream
1 tbsp of lemon juice
1/4 cup of sweetener of choice (I use Altern - but you could use sugar or any sugar substitute)
Salt & pepper
Directions:
1) Thinly slice cabbage and place in a large bowl
2) In another small bowl, mix together sour cream and lemon juice
3) Add mixture to the bowl with cabbage and stir until all cabbage is coated
4) Add sweetener and toss until evenly distributed
5) Season with salt & pepper to taste, and enjoy!
