(Yields 6 servings)
Ingredients
2 mangoes
2 avocados
2 limes
2 heaping tbsp chopped cilantro
6 salmon filets
Lemon pepper
Garlic salt
Instructions
1) Season salmon filets with lemon pepper and garlic salt on both sides
2) Preheat pan or griddle to medium heat and coat with olive oil
3) Dice mangoes and avocados
4) Add mangoes, avocado,and chopped cilantro to a medium bowl and toss to combine
5) Squeeze juice of 2 limes in the bowl and toss to coat
6) Add salmon filets to preheated griddle and cook until lightly browned on each side, around 2-3 minutes (salmon will have a flaky texture when cooked through)
7) Plate salmon and top with salsa
