Southwest Scramble

Eggs are one of my favorite things to cook with because they are so versatile. Making burgers? Add an egg. Making stir fry? Add an egg (or two). Making tuna salad? Add boiled egg - trust me. There are so many ways to incorporate eggs into meals, and they are super filling. I'll be sharing an avocado egg salad recipe soon, and I can't wait because it is soooo good. But for now, this southwest scramble will do the trick! Not only is it super tasty, but it is packed full of protein and fiber. Win-win!


*In this recipe, I used a chile lime chicken burger from Trader Joe's for the meat (honestly because it is all I had at the house), but you can use whatever meat you want! If you want a leaner choice, I would go with ground chicken or turkey, if not ground sausage would work just fine!*


Ingredients

2 eggs

1 Trader Joe's chile lime chicken burger (read note above for alternate meat choices)

1/2 c of spinach

1/4 c diced onion

1/2 avocado

Salt & pepper

Garlic powder

Olive oil

Optional: Mexican blend shredded cheese


Instructions

1) Add 2 tsp olive oil to a skillet with onion and cook on medium heat for 3-5 minutes, or until onion starts to soften

2) Add in meat of choice and cook until completely cooked through

3) Add spinach and eggs to skillet with other ingredients and stir in well

4) Season to taste using salt, pepper, and garlic powder (if you are using a different meat, you can add some red pepper or cumin to add a little more flavor)

5) Continue to cook on medium heat until eggs are cooked completely and spinach is wilted

6) Optional: you can add a little Mexican blend cheese to your bowl if you prefer

7) Slice avocado and serve on top
