I had a request come through for sun-dried tomato recipes, so here we are! One word - rosemary. I love love love cooking with rosemary. It has such a distinct flavor, it's so hard to even describe. But it is definitely something to try, and it is so simple. You don't even have to pick the leaves off, you just throw the whole stem in! Let's be honest, that's my favorite part. If I hate one thing about cooking, it's picking the leaves off of and chopping herbs. Don't ask me why - I just hate it. But anyways... give this recipe a try! It only took about 15 minutes and was so good.
Ingredients
1/2 c of sun-dried tomatoes
1 jar of Alfredo sauce
1 package of Trader Joe's chicken sausage
Banza chickpea pasta
Olive oil
Fresh rosemary
Milk
1/2 c Mozzarella cheese
Instructions
1) Boil a large pot of water
2) Add sun-dried tomatoes to a skillet with a splash of olive oil and allow to cook for 2-3 minutes
3) Slice chicken sausage into 1/4 inch rounds
4) Add chicken sausage to pan with tomatoes and saute for 4-5 minutes, or until browned
5) Add chickpea pasta to boiling water and cook for 9-11 minutes or until al dente
6) Add Alfredo sauce to skillet with tomatoes and chicken sausage and add in rosemary stems
7) Let rosemary simmer in Alfredo for 7-8 minutes, stirring often
8) Add Mozzarella cheese
9) Add in milk a little at a time to reach desired consistency (I added around 1/2 c)
10) Remove rosemary and throw away
11) Add pasta to pan with sauce and stir to evenly coat
