These are perfect for low-carb days or for meal prep. You can also use canned salmon instead of fresh if you want to make it cheaper and quicker, however I prefer the taste of fresh salmon. *Tip: if you want to get some extra fiber or a serving of veggies in, add in a handful of steamed spinach to the mixture*

Yields 10 burgers
Ingredients
2 lbs salmon
3 small sweet potatoes
Fresh cilantro
Olive oil
Salt & pepper
Garlic salt
1/3 c Italian style breadcrumbs
1 avocado
Instructions
1) Preheat oven to 375
2) Rinse and peel sweet potatoes
3) Slice sweet potatoes into 1/2 inch thick circles
4) Toss sweet potato slices in olive oil
5) Rub olive oil on salmon filets
6) Season salmon and sweet potatoes with salt, pepper, and garlic salt and top with several leaves of cilantro
7) Roast in oven for 25-30 minutes or until sweet potatoes are soft
8) Mash sweet potatoes using a fork or a potato masher
9) Flake salmon using two forks and add to the bowl with sweet potatoes
10) Add breadcrumbs to mixture and combine
11) Make into 3/4 inch thick patties and cook in skillet until browned on both sides (4-5 minutes each side)
12) Thinly slice avocado and place on top of patty
