Blueberry-Banana Oatmeal Muffins

These are perfect for a quick breakfast on-the-go! I usually make these the night before so I can grab one on my way out the door. You can substitute any berry you'd like, or even chocolate chips! I just chose blueberries because they are my favorite.


*Yields 12 muffins

Ingredients

2 medium bananas

2 eggs

2 cups of rolled oats

1 cup of blueberries

1 cup of brown sugar

1 tsp of vanilla

1 tsp of baking powder


Instructions

1) Preheat oven to 425

2) Mash bananas with a fork in a medium bowl

3) Whisk in eggs and stir until combined

3) Add brown sugar, vanilla, and baking powder and mix well

4) Add in oats and stir until combined

5) Add blueberries (or berry of choice) and stir to combine

6) Spray muffin pan with non-stick spray *if you like a sugary coating, use butter to grease and shake sugar or brown sugar over to coat*

7) Fill each muffin cup evenly and bake for 15 minutes
