Strawberry Cream Cheese Muffins

This might be my new go-to muffin recipe. You can easily switch it up by using different fruit, or even omitting the fruit all together and opting for a flavored cream cheese. I can’t wait to see what tasty combinations I can come up with! But for now, strawberries and cream will do. These make the perfect grab-and-go breakfast for all my people who don’t like waking up early enough to cook every morning (aka me.) The best part? Only 110 calories apiece!


Ingredients

2 c rolled oats

2 scoops vanilla protein

1 tsp baking powder

1 1/2 c applesauce

2 eggs

6 tbsp cream cheese of choice (I used whipped for less calories)

2-4 tbsp maple syrup (depending on how sweet you want it)

4 fresh strawberries - finely chopped


Instructions

1) Set cream cheese out for 15-20 min, or until room temp

2) Preheat oven to 350

3) Place oats in a food processor or blender and blend until close to a flour consistency

4) Add vanilla protein and baking powder and stir to combine

5) In a separate bowl, whisk together eggs and applesauce

6) Add the oat mixture to the bowl with eggs and applesauce and stir to combine. This will be your muffin mix

7) In a separate bowl, combine cream cheese and maple syrup. Then fold in strawberries

8) Line each muffin tin with paper liners (makes 12 muffins)

9) Pour about a 1 inch layer of the muffin mix in the bottom of each muffin cup

10) Add a spoon of the cream cheese mixture on top of each muffin, then pour remaining mixture of muffin mix on top

11) Bake for 20 min or until golden brown
